The Mercedes G63 AMG comes with an "Eco" start/stop button.
Can we just look at some of the things around the ECO Start/Stop system:
5.5L Bi-Turbo V8
Permanent all-wheel drive with a 2-speed transfer case
Three lockable differentials
All three of these things come together along with the weight and aerodynamics of a brick to make what's probably the most inefficient passenger vehicle on the road, and Mercedes thinks a start/stop feature is going to help that?

From what I understand, if you are a mostly city driver, the stop/start feature saves 5-7% of the gas you would use on that tank. If you can get over the annoyance, what's the harm? It doesn't rob any of the horses when you stomp on it...
At least in the AMG, the standard is the default and the ECO is the option. I'm sure you can go through all 600 menus and make it the default.

I wouldn't ever shut it off. I'd get a small water tower, fill it with gasoline, and run a hose to the car so it's idle could lull me to sleep at night.

In many European countries there's a CO2 tax. This start-stop system has a significant effect on CO2 emissions of the very theoretical European fuel economy (/CO2) testing cycle, meaning including the start-stop system will actually result in a cheaper car in many countries.
Example: due to it being such a gas hog the G63 with CO2 emissions of 322g/km the vehicle is hit with a gas guzzler (CO2) tax of €72k in the Netherlands. Assuming a 5% reduction of CO2 emissions with the start-stop, the (very progressive) gas guzzler tax would be less than €65k. That's a discount of over €7k ($10k).

I am not kidding when I say that a device which automatically revs the engine whenever you stop to make as much noise and waste as much fuel as possible would be more appropriate.

Pretty much.
You don't see Yukons or Tahoes rolling around with an Eco button. They know their place in this world... They do have cylinder de-activation though.
